Meals That Will Last A Few Days

Food that can really stretch isn’t only a money saver, it’s a time saver. Even if you love to cook, chances are that you aren’t necessarily hyped on the idea of cooking every single night. That’s why it’s always a good idea to have a few recipes that will last a few days. While it’s true that some meals definitely lose a bit of their yum factor with subsequent reheats, others improve a day or two in. If you wanna limit those runs to the grocer, peep these tasty recipes and feast for days

Lasagna

Not only does lasagna comfortably fall into that category of meals that will last a few days, but it also just gets tastier. Lasagna, as we know it today, has been around for ages. In fact, the first recorded recipe dates back to the early 14th century. It’s thought to have been first created in Naples. The other great thing about lasagna is that you can totally take short-cuts if you want. Want to make your own sauce from scratch? You go girl! Not feeling it and want to use jarred sauce instead? We salute you! There are so many variations on the “classic” recipe, that you can really get creative. Sub white sauce for red, and chicken for beef. Now you’ve got a chicken Alfredo version. Whichever way you go, you can’t really go wrong.

Soup

Delicious, comforting, and definitely a food that will last you a coupla days, soup is where it’s at. You can even give yourself a bit of variety by pairing it one day with a sandwich, and then maybe a salad the following day. Soups are also notorious for improving with a day or two in the fridge, since all those delicious flavors have more time to completely infuse every spoonful. No matter if you’re a french onion soup junkie, a “cream of” devotee, or just love a down-home style lentil soup lovin’ gal, you’ll have noms for days.

Stew

Ever try to make stew for one? Yeah, it’s impossible. But that’s okay, because the stuff is seriously tasty and it’s not exactly a chore to eat it more than one day. If you wanna shake things up a little bit, try using different “bases” for under your stew. You could do rice one day, maybe some potatoes another, or even egg noodles. For the stew itself, it’s hard to go wrong with the white bean favorite of fasoolia baida. Vegetarian or Vegan? No probs, you don’t need meat to impart serious flavor. This Turkish eggplant stew recipe is tops. Or, you could beef things up with a scrummy beef and green bean stew like this one. Any way you go about it, the delish factor will last for days.
