#Recipe: Karak Cookies

I’m not much of a tea drinker, but let’s face it, Karak chai doesn’t live in the realm of ordinary tea. Its warm mix of spices and layers of favour to satisfy every time. Now add that to desserts and we have a winner! Chips Ahoy what? In this episode, Athina creates her take on cookies, and transforms them into Karak Cookies. This spicy delight is the perfect partner for a cup of coffee, or (karak) tea, to dunk in and eat. Check out her recipe:

Ingredients:

2 ¾ cups All-purpose Flour

1 tsp Baking Soda

½ tsp Baking Powder

½ tsp Salt

1 ¾ cups Caster Sugar

1 tsp Ground Cardamom

½ tsp Ground Cloves

2 tsp Ground Cinnamon

1 tsp Ground Ginger

250gms Unsalted Butter (softened)

1 Egg

½ tsp Vanilla Extract

Steps:

Preheat your oven to 180°C.

Combine the sugar and spices in a large mixing bowl. Remove ¼ cup of the spiced sugar mixture and set aside (to roll the cookies in later).

Next, add the softened butter to the spiced sugar in your large mixing bowl. Using an electric whisk (or paddle attachment in a stand mixer), beat the butter and sugar mixture until pale and fluffy – about 5 minutes.

Add the egg and vanilla extract and mix until combined.

Then sift in the flour, baking soda and powder, and salt. Mix until just combined.

Roll dough into balls and then coat in remaining spiced sugar mixture.

Place on a lined baking tray and bake for 10-12 minutes.
